Admittedly it wasn’t such a hit with the Ankle Biters this time but my friend Cath and I were mightily impressed. I roasted the pumpkin the day before when I was cooking dinner which made them really quick and easy to whip up too. Budget too, perfect!

Pumpkin, Walnut and Feta Scrolls

1.2kg pumpkin, peeled and deseeded and cut into 1cm cubes
2 tablespoons olive oil
1/2 teaspoon allspice
1 tablespoon thyme
200g feta, crumbled
1 cup walnuts, chopped
12 sheets filo pastry
melted butter
sesame seeds
Preheat oven to 220 degrees, Drizzle oil on baking tray, place pumpkin on and toss through oil. Roast until light golden and tender 20 minutes – 30 minutes.
Transfer to bowl, set aside to cool.
Mix in walnuts, seasoning, spices, feta and combine well.
Place one sheet of pastry on board, long side facing you. Brush with butter and place another sheet on top. Make a line of pumpkin mix along the long edge (1/6th of total pumpkin mixture). Roll up into long log. Then roll long log into swiss roll shape. Brush outside with butter and scatter sesame seeds on top.
Repeat until you have 6 scrolls.
Bake for 20 – 25 minutes and serve warm.
