Due to having an unusual number of social commitments plus a scheduled Blood Bank appointment, I was driven to do my two fast days consecutively. This is not something I would normally do and not something I had done before. I was a little concerned about the second day and getting through work without eating any children. This lunch was the perfect, the sheer size of it got me through the day beautifully. It is based on Michael Mosley’s ‘phyto burst lunchbox’.

Fast Day Super Salad
2 canned artichoke hearts, cut into quarters (32 calories)
8 stalks broccolini, lightly steamed (35 calories)
100 grams canned baby beets (48 calories)
1/2 cup finely sliced red cabbage (14 calories)
1 radish, finely sliced (3 calories)
1/4 red capsicum, sliced (7 calories)
1/2 Lebanese cucumber (5 calories)
1/3 cup grated carrot (15 calories)
20 grams diced corned beef (31 calories)
juice 1/2 lemon (5 calories)
Mix it all together and squeeze lemon juice over the top. Eat slowly and enjoy!
