This week got away from me a bit in the kitchen department which meant I had a selection of vegetables that really needed to be cooked today. Plus I had some odd remnants of cheese.

Cheese and Vegetable Strudel
A few stray snow peas
A few stray green beans
1 head broccoli
1 potato
wedge pumpkin
8 baby carrots
3 cloves garlic
1 zucchini
1/2 onion
70g blue cheese (Danish)
200g feta
25g mozzarella
6 sheets filo pastry
butter

Blanch the greens. Cut all other vegetables into small pieces and roast. Roast the garlic too in it’s skin. Combine vegetables and cheeses together, squeezing roasted garlic out of skin. Brush sheets of filo with butter, mound vegetable mixture on and cvoer with more filo. Bake at 180 degrees until filo is browned. Yum
