What more do you want? Snappy post titles?

Still battling the brain funk but desperately trying to move my way through the massive pile of assorted papers that accumulated during the computerless days. Really, it was less than a week. How could such a large pile with such a broad variety of tasks gather so quickly? It’s cruel and unusual frankly. Mind you I must admit to a strong reluctance to deal with a lot of tasks due to the fact that I am on a temporary computer for the next 6 – 8 weeks. I know, I need to get over it.

Moving right along…

Tuna Burritos

8 – 10 tortillas (I made yummy white corn ones)
410g tin tuna in springwater
400g tin tomatoes
handful olives, roughly chopped
1 onion, finely chopped
2 cups grated cheese
sour cream
fresh coriander, roughly chopped
Preheat oven to 180 degrees. Grease a rectangular baking dish.
In a large bowl, combine tomatoes, olives, tuna, onion and half the cheese. Mix until well combined. Divide amongst tortillas, roll up and place in baking dish seam side down. Sprinkle remaining cheese over the top.
Bake for 15 – 20 minutes. Serve topped with sour cream and coriander.
