Tonight is the second night of leftover roast pork so I thought I better get creative. All I had to buy was the wonton wrappers because I just couldn’t be bothered making them. This is what I invented.

Dumplings

Approx 1 1/2 cup diced roast pork
Approx 1 cup frozen cooked prawns (leftover from the seafood bisque the other night)
Bunch of chives (from the garden)
Whiz together in food processor (or 20 seconds on speed 5 in thermomix)
Place tea spoonfuls onto wonton wrappers and seal by wetting edges.

Fried Rice.

I defrosted a bag of leftover rice that was in the freezer (goodness knows when that was from).

In a wok I made a thin omelette out of 2 beaten eggs, threw in rice, a handful of frozen peas and some chopped spring onions. I had a small amount of the dumpling stuffing left over when I ran out of wrappers so I threw that in too.
Then I steamed the dumplings (in the thermomix of course!) and served on top of the rice with a drizzle of soy sauce.
