I am in the process of cleaning out odds and ends of ideologically unsound food from the cupboard. Plus I made mayonnaise today. Which left me with 4 egg whites and 35g of Lindt 85% chocolate and heaps of caster sugar.
I adore Lindt chocolate and very much regretted having to put it on the ideologically unsound list. Sadly though, aside from the refined sugar issue (which I could overlook from time to time), they source cocoa from Ghana where cocoa plantations use child slavery. I can’t overlook that. The 35g I found in the pantry pre-dates that knowledge.
Anyhoo, ideology aside, I beat the egg whites until stiff then gradually beat in about 5g caster sugar. Then I melted the chocolate over hot water, stirred a little of the egg mixture into it and then folded the chocolate mixture into the rest of the egg mixture. All very gently so as not to knock the air out of the egg. I divided the mixture between 2 greased ramekins. Then I had a brief wrestle with Nic over licking the bowl and spatula. He got the spatula, I got the bowl.I baked the souffles (I suppose that’s what they are) at 180 degrees for about 10 minutes until they looked cooked. Delicious.
