Well, well, well, haven’t I been the uncharacteristically absent blogger this week! Lil Miss has had gastro so my attention has been on washing bed linen, mopping up, showering and trying to get the poor little pet to keep some fluids down. Just as I was starting to become concerned about her state of dehydration, she turned the corner and is now back to her normal adorable self. Fortunately, no one else was struck down although Son and Heir was a little lethargic so possibly his system was fighting it off.
To occupy the minds of the Ankle Biters, we’ve been ploughing through our current Enid Blyton, Mr Galliano’s Circus. This was a major favourite of mine as a child. I’m surprise it is in such good condition for the number of times it was read. I was pedantically careful of my books though even as a small child. Now I’ve read enough Enid Blyton this year since Son and Heir discovered the delights to realise that her writing is a little dated. That did not, however, prepare me for Sammy the circus chimpanzee to enter smoking a cigarette! My eyes were far enough ahead of my mouth that I was able to seamlessly omit that sentence. That is a level of animal cruelty I did not feel up to explaining after a night of cleaning vomit.
Today, order is restored to Chez KP. Just in time for Son and Heir’s fifth birthday on Sunday. Much preparation is required between now and then to celebrate in style. So tonight I threw together a very quick and easy pasta bake in between cleaning both the house in which we live and the cubby house in which I found much of the sand that should have been in the sandpit.

Silverbeet and Mushroom pasta bake
10 large silverbeet leaves, blanched and chopped
3 large field mushroom, sliced
1 onion, finely chopped
3 cloves garlic, finely chopped
1 tablespoon olive oil
1 tablespoon butter
8 sun dried tomatoes, roughly chopped
1/2 cup cream
pasta of your choice (I used 4 left over lasagne sheets, broken into pieces)
parmesan to serve
- Preheat oven to 180 degrees
- Heat olive oil in large frypan. Saute onion and garlic for 2 minutes. Add butter and mushrooms. Saute for another 2 minutes.
- Add drained silverbeet, tomatoes and cream. Combine and remove from heat,
- Mix with pasta and place in oven proof dish.
- Place in oven for 20 minutes
- Serve with parmesan on top.
