I mentioned yesterday that I whipped up a potato salad for our Cup Day BBQ. I thought I’d share the recipe with you. There are so many wonderful versions of potato salad and this is one of my favourites

Potato and Olive Salad
8 – 10 small potatoes
1/3 cup homemade mayonnaise
1/4 cup roughly chopped stuffed olives
2 rashers bacon, fried until crisp and chopped into small pieces
snipped chives

  1. Steam potatoes until just tender. Allow to cool slightly
  2. Cut into large dices (roughly quarters)
  3. Toss everything together while potatoes are still warm
  4. Serve warm or at room temperature
