Every time I open the fridge lately I see more leftovers dictating my life. I thought I’d cleared it this morning but a half eaten tin of baked beans just waved at me. I have no idea where that came from. Hmm, must be the Bread Winner at work.

All’s well that doesn’t get wasted though. I mixed the beans (about 200g) with a handful of finely grated cheese and 1 egg. The I cut a large piece of sorj bread into six and lined a greased muffin pan with the bread. The bean mixture divided perfectly into the muffin pan. A light spray over the top with olive oil and into a moderate oven for 15 – 20 minutes.

Perfect for a light nosh, kiddy lunch, after school snack and so on and so forth…
