Mixed Chocolate Cheesecake
175g packet shortbread biscuits, crushed
75g butter, melted
500g cream cheese, softened
3/4 cup light muscovado
2 teaspoon gelatine, dissolved in 14 cup boiling water, cooled
100g fairtrade orange flavoured chocolate
100g fairtrade white chocolate with scorched almonds
1 cup pure cream
8 seconds at speed 5 will crush the biscuits
2 minutes of 100 degrees on soft speed will melt your butter.
Combine crumbs and butter well and line the base of a greased spring form pan with them.
Place chocolate, broken into squares and cream in thermomix. Cook at 50 degrees on speed 3 for 1 minute and 30 seconds.
Add cream cheese, muscovado and gelatine. Blend for 2 seconds on speed 4. Pour onto base. Refrigerate until set.
