I’ve been neglecting Into the Vietnamese Kitchen of late due to holidays and the need to clean out the freezer. I couldn’t neglect it any longer though, I was missing those heavenly flavours. So tonight, we had had the grilled chicken with salt pepper and lime dipping sauce served western style with a simple green salad which I garnished with coriander and Vietnamese mint.
chicken thighs (I used breasts because it’s all I had)
1/4 teaspoon palm sugar
1/2 teaspoon salt
1 1/2 teaspoons black pepper
1 tablespoon fish sauce
1 tablespoon lime juice
2 tablespoons rice bran oil
Mix ingredients together and massage well into chicken. Marinate for around 2 hours. Grill until cooked through and slice into strips to serve.

Serve separately for everyone to make their own little dipping sauces to taste.
