I was running a bit late tonight so had a quick peek in the fridge to see what I could whip up in a hurry. I found a bit of leftover cured salmon, a couple of mushrooms and a dash of cream on it’s last legs. Brilliant. Not much quicker and easier than pasta.
Creamy Salmon and Mushroom Pasta
Cured Salmon, about a cup, thinly sliced
Mushrooms, about a handful, sliced
Butter, a nice big dob
Garlic, 1 clove sliced
Cream, 1/4 – 1/2 cup
85g triple cream brie
Spaghetti, the thinner it is the quicker it cooks
While the spaghetti cooks, saute mushrooms and garlic. Throw in every thing else and simmer, stirring until cheese has fully melted. Mix through cooked, drained pasta and serve. Bellissimo.
