I whipped this one up in the thermomix. Another hurried night preparing for First Born’s birthday. Not quite a 10 minute meal but it came really close.

Chicken in Lemon Garlic Sauce
Serves 2.
3 cloves garlic
juice of 1 lemon
20 ml olive oil
3 thigh fillets cut into bite sized pieces
100ml cream
2 tablespoons fresh oregano, roughly torn
1 tablespoon cornflour.
Handful green beans chopped into bite sized pieces.

Chop garlic in thermomix for 10 seconds on speed 6.
Add lemon juice and olive oil. Cook for 2 minutes on speed 1 at 90 degrees, Add all other ingredients except beans and cook for 10 minutes at 100 degrees on reverse soft speed. Add beans for last minute.
Serve over rice.
