This is my adaptation of a recipe I found on Seriously Good

Greek style Meat Loaf

500g minced lamb
1 tablespoon olive oil
250g feta, crumbled coarsely
1 red onion
3 garlic cloves
1/4 cup lemon juice
1 cup baby spinach
2 tomatoes, roughly chopped
1/2 cup bread crumbs
1/4 cup chopped fresh mint
2 eggs, lightly beaten
2 tbsp tomato paste
1/2 tsp coarsely ground black pepper
3 – 4 bacon rashers or prosciutto

To cook in thermomix:
Grate the bread into crumbs 10 seconds on speed 8. Put aside.
Quarter onion and peel garlic. 10 seconds on speed 7. Saute for 2 minutes at 100 degrees, speed 1.
Wilt baby spinach in boiling water
Add all remaining ingredients (except bacon), mix for 10 seconds on speed 5.
Remove mixture and shape into a loaf. Wrap in bacon. Place in varoma along with any vegetables you want to serve with it. I’m thinking Greek salad rather than veg though.
Put a couple of cups of water in the thermomix bowl. Place varoma on top.
Cook for 40 minutes at varoma temperature on speed 1. Don’t bother washing the bowl first, that cooking process will do that for you.

Serve with tzatziki drizzled over the top and Greek salad

To cook in oven:

Sautee onion and garlic in olive oil.
Wilt baby spinach in boiling water
Combine all ingredients (except bacon), line a loaf pan with bacon and fill with mixture, wrapping ends of bacon over the top. Bake at 180C for 30 to 40 minutes until cooked through. Drain any excess moisture and allow to rest before slicing.

Serve with tzatziki drizzled over the top and Greek salad
