Creamy chicken, Chickpea and Couscous

This was actually a quick throw together of some chicken breasts with leftover Morrocan Style Vegetables and Couscous. Very quick and easy and it tasted completely different to it’s previous incarnation. Truth be told, it could have done with a splash of white wine but I didn’t have any.

I adore brown lentil salad, particularly with lamb cutlets. It’s a little meal of mine I haven’t shared with you as yet. We had a variation on it tonight.

Kathy’s food challenge for today left me a little torn. So here is a choice, it all comes down to whether you want a hot or cold dinner.

I whipped this one up in the thermomix. Another hurried night preparing for First Born’s birthday. Not quite a 10 minute meal but it came really close.
Chicken in Lemon Garlic Sauce
Serves 2.
3 cloves garlic
juice of 1 lemon
20 ml olive oil
3 thigh fillets cut into bite sized pieces
100ml cream
2 tablespoons fresh oregano, roughly torn
1 tablespoon cornflour.
