Satisfaction Soup, from one depression era to another.

This soup is a ‘Nana from the depression era’ soup. Incredibly simple and cheap to make with more flavour than the ingredients would suggest. It’s a good one for fussy kids too. Unless you’ve got one of those spoiled, expensive menfolk who insist on a slab of meat at each meal, this makes a hearty meal with a side serve of toast or scones. Cheesy scones are especially good.
I made this in the thermomix. First I chopped the vegetables, then added butter and sauteed. I added the liquid and cooked and pureed in the thermomix. Couldn’t be easier.
Satisfaction Soup
1 bunch celery, chopped (include leaves and all, no wastage allowed during the depression)
1 large onion, chopped
1 large carrot, chopped
2 tablespoons butter
2 1/2 cups stock (vegetable, chicken or beef as you choose)
2 sprigs thyme or 1 teaspoon dried thyme
1/2 cup oats, oat bran or barley bran
600ml milk
1/2 cup chopped fresh parsley
seasoning
- Saute vegetables in butter for 5 minutes or so.
- Add stock and herbs and simmer gently for up to an hour until vegetables are tender.
- Blend until smooth. Add oats or bran and simmer for another 10 minutes.
- Gradually add milk and gently rehear. Season to taste.
- Stir in parsley and serve immediately





Love the ‘nana’ recipes! I’ve just inherited my nanny’s recipe books and a few other gadgets. One of the greatest finds was two hand made butter stamps, replete with her fingerprints in them!
Those buttermilk (?) biscuits need a follow up post me thinks; they look perfectly divine!

I don’t use buttermilk in my scones (biscuits) because I never seem to have any defrosted at the right time. Happy to do a post around them though.
