Not that it’s summer yet but with the weather we’re having it may as well be! Sorry there’s no pictures but I forgot to charge the camera. Which is a pity, it was a pretty meal

Coriander Pesto Crusted Swordfish with Shredded Tzatziki Salad
2 pieces of swordfish (serves 4, it’s a big meaty ocean fish)
2 bunches coriander
1 cup pinenuts
1 cup finely grated grana padano
1/2 capsicum
1 carrot
1 cucumber
2 tomatoes
3 radishes
1 red onion
1 cup plain yoghurt
2 cloves garlic, finely chopped

To make pesto:
In thermomix – blend coriander, pinenuts and parmesan on speed 7 for 20 seconds.
Conventionally – blend until well minced and combined

To make tzatziki:
In thermomix – put cucumber in bowl and pulse turbo button twice. Drain for 15 minutes. Chop garlic for 15 seconds on speed 7. Add yoghurt and drained cucumber and miz for 10 seconds on reverse soft speed.
Conventionally – cut cucumber into tiny pieces. Finely chop garlic. Stir through yoghurt

To make salad:
Cut all salad ingredients into very small pieces. Thoroughly toss tzatziki through so everything is coated. Do this just before serving.

To cook Swordfish:
Grill for 4 minutes. Turn, cover uncooked side with pesto and grill for another 4 minutes
