Sometimes, an odd scrap of leftovers leads me in an unusual direction. Today was one of those days. It all began with 6 sheets of leftover spring roll wrapper. I’ll tell you in advance, the gamble paid off. Dessert was delicious.

Today, it’s the Bread Winner and my anniversary. Our wedding anniversary that is. We celebrate both our wedding anniversary and our original anniversary. Because we can and because it seems kind of strange to discount the years we were shacked up before we decided to go all traditional.

Because he loves cheesecake and I love him.
Mixed Chocolate Cheesecake
175g packet shortbread biscuits, crushed
75g butter, melted
500g cream cheese, softened
3/4 cup light muscovado
2 teaspoon gelatine, dissolved in 14 cup boiling water, cooled
100g fairtrade orange flavoured chocolate
100g fairtrade white chocolate with scorched almonds
1 cup pure cream
8 seconds at speed 5 will crush the biscuits
