This is such an easy meal to satisfy the whole family with. I ate mine from a bowl, the rest of the family stuffed theirs into Vietnamese rolls from our local bakery. Perfect for a hot night.

Total calories 1604.  267 calories if split 6 ways, 201 calories if split 8 ways.

Vietnamese Chicken Salad

Serves 6 – 8

2 chicken breasts, poached and shredded (50 grams = 81 calories. Mine were 458 grams/742 calories)

270 grams (1/8 of a small) wombok finely shredded (57 calories)

340 grams (1/4 head small) red cabbage shredded (71 calories)

2 medium carrots, grated (50 calories)

2 spring onions, finely sliced (4 calories)

Vinaigrette

1/2 cup white vinegar (40 calories)

5 tablespoons extra-virgin olive oil (600 calories)

4 tablespoons fish sauce (24 calories)

½ teaspoon palm sugar (16 calories)

Method
Combine vinegar, oil, fish sauce and sugar in a jug.

In a large bowl combine chicken, wombok, red cabbage, carrot and spring onions.

Dress, toss, cover and refrigerate at least 2 hours  to allow the flavours to combine.
