Oh my heavens I love cheese. Bugger chocolate (nice though it can be), I’ll take cheese any day. So for a cold winter evening, I made this combination of cheeses with some pasta, pumpkin and sage thrown in to flesh it out.

Tortellini with Pumpkin, sage and three cheese sauce
adapted from yet another Super Food Ideas recipe
1 large wedge pumpkin, peeled, deseeded and cubed
2 tablespoons sage leaves, chopped
1 cloe garlic, crushed
1 tablespoon olive oil
500g packet tortellini
1 cup cream
100g thinly sliced mozzarella
100g creamy blue cheese, crumbled
100g parmesan, grated
seasoning

  1. Preheat oven to 220 degrees. Place pumpkin, garlic, sage and oil in baking dish, toss and season. Bake for 20 – 25 minutes until pumpkin is tender.
  2. Meanwhile, cook tortellini and drain.
  3. Combine cheeses and cream with tortellini and then toss into pumpkin.
  4. Return to oven for 15 minutes until bubbling and golden
