Cleaning out the fridge filo parcels

8 sheets of nearly dried out filo
melted butter
half a bag of mushrooms, sliced
3 rashers of bacon, sliced
a small piece of tasty cheese sliced thinly
2 small brown onions, finely chopped
2 teaspoons dried thyme
4 cloves garlic, finely chopped
small bowl of leftover steamed rice
small drizzle of cream
leftover snow peas
Heat a little oil in a fry pan. Add mushrooms, onions, garlic, thyme and bacon and fry until mushrooms are just tender. Turn off heat and stir through cream and rice.
Brush a sheet of filo pastry, with melted butter. Fold in half. Repeat with another sheet and stack them on top of one another. Spoon a quarter of the fry pan mixture into the middle, top with a quarter of the cheese and fold into a parcel. Brush top with melted butter. Place on greased baking tray. Repeat until you have four parcels and all ingredients are used up. Bake in a moderate oven for 25 – 30 minutes or until golden.
Steam snow peas and divide between 4.
