That crock pot fiend has done it again. Her Spanish rice casserole is totally brilliant comfort food. I upped the rice quantity (and pre-soaked it overnight). Instead of Italian seasoning, I just ripped some oregano and basil out of the garden and threw that in. To make it appear like I had gone to some effort, I halved a golden nugget pumpkin, removed the seeds and stuck it in the oven until it was cooked. I used each half as a serving bowl for the Bread Winner and I. The kids ate earlier, I just dumped theirs in bowls. We had it topped with grated parmesan. Serious deliciousness. Great budget food too, especially if you triple the rice like I did.
