I felt like a meat free night but if that’s not your thing, you could always add some chopped bacon to this. I love a savoury strudel. Word of warning, don’t buy filo from the freezer section, it’s awful muck. Buy in from the fridge section. If you’re butter phobic which I am most definitely not, you can brush the filo with orange juice instead, it works just as well.

Asparagus and Mushroom Strudel
450g mushrooms, sliced
1 onion
2 cloves garlic
1 cup breadcrumbs
300g cottage cheese
4 tablespoons sour cream
2 bunches of asparagus, woody ends snapped off and cut into small pieces
butter
filo pastry

Chop onion and garlic and lightly saute with mushrooms. Place in a bowl and mix breadcrumbs, sour cream, asparagus and cottage cheese through.
Butter and layer 4 sheets of filo. Place mushroom mixture on top. Butter and layer another 4 sheets of filo, place on top and fold edges of bottom and top together. Bake in a moderate oven for 20 minutes or until browned
