The Food Challenge

One of the most satisfying sojourns into the kitchen has to be the combining of odds and ends to create a meal out of seemingly nothing. Those days when nothing appears to be available to construct an actual meal out of, inspiration is taking a long walk and a trip to the supermarket seems a most unreasonable course of action.
Next time, this is your lot in life, throw me a challenge. Post comments on this page telling me what you do have in the house and how many you need it to feed and I will create a recipe and post it on the main page for you.

Ok. A recipe to feed 4 please. I have:
1 tin of salmon (400g), potatoes, tins of tomatoes, fresh tomatoes, asparagus, zucchini, eggs, tinned chickpeas or lentils, anchovies, basic pantry supplies (flour, spices etc)…. Not all needs to be used. Oh - and I have some filo pastry sheets in the freezer.

In the pantry is lots of cans of chickpea’s, brown lentils, and stuff like diced tomato. In the fridge is a small bit of brochille, mushrooms, asparagus and zucchini’s. Meat wise I have a whole BBQ chicken, what I think is port fillet and chicken thighs.
(I need to use the asparagus and zucchini’s soon, so they are a priority)

OK Dani, I’ve been given a huge bag of cooking apples. Can I and how do I make applesauce and freeze it for using in baking recipes, will it substitute for sugar? What about apple cake of some description? TIA! xx

Hi Dani, I’ve been writing on my blog about some ideas for lowering my food bill and would love some meal ideas that are still healthy but also cheap to make, stuff like slow cooker casseroles. Do you have any super recipes. Thanks Kathy

Hi Kathy, I’m rapidly collecting budget meals for the same reasons as you. If you search KP for budget meals you should find lots, including slow cooker. More coming every day. Budget meals cost me less than $2.50 per serving to make.
As the latest news on oil is so incredibly grim, and the flow on to food is going to be horrific, I will endeavour to start costing out all recipes I post. If only for the nostalgia of seeing in years from now how cheap food has been. Hopefully it will help other people in the meantime too.
closely related to your daily blog… some fresh ideas for a fussy preppie for her lunch. Something a wee bit different to honey sandwiches….. trying to add protein to the lunch if I can (and no she won’t eat ham or other cold meat in sandwiches!)
