I was running a bit late tonight so had a quick peek in the fridge to see what I could whip up in a hurry. I found a bit of leftover cured salmon, a couple of mushrooms and a dash of cream on it’s last legs. Brilliant. Not much quicker and easier than pasta.

Here is my first attempt at curing salmon. I only used a small piece in case things went pear shaped.

50g Murray River salt crystals

1 Zucchini
1 bunch asaparagus
2 - 3 tomatoes
1 tin salmon
4 sheets filo pastry
Preheat oven to 180 degrees.

Mondays are getting away from me at the moment. Between spending the morning working in the pool and the afternoon grocery shopping, not to mention a weekend’s worth of laundry…I need a quick and easy meal.
