Good old December knows how to throw her weight aound doesn’t she? Its only the third and my schedule is in complete disarray. So much so in fact that the entire concet of dinner did not enter my mind until after 4pm this afternoon. We generally eat at 5 (Anke Biter time) so this was a bit of a problem. Particularly as I’ve already thrown a pasta dish together this week.

Tonight, the other great carbohydrate did the honours. Baked potatoes. I didn’t have any of our usual favourite stuffings on hand so I improvised baed on some fridge scraps. The end result was surprisingly good given it’s dubious origins. There are no pictures as that would have required a level of organisation that simply does not fit the general vibe of my day.

Mexican style stuffing for baked potatoes.
5 leaves silverbeet, finely chopped
1/2 can refried beans
1/4 onion, finely chopped
1/4 tomato, diced
1 teaspoon cumin
1 tespoon ground coriander
1 teaspoon chilli powder
1 tin diced tomatoes
2 cups grated cheese

  1. Place everything except the cheese in a small saucepan.
  2. Heat, stirring until hot enough to serve.
  3. Top with cheese.

Complex, innit?
