Nothing like a gorgeous sunny day to make a woman neglect her indoor tasks in favour of her outdoor tasks. I arrived home from work at lunchtime and thanked my lucky stars I’d planned a quick and easy meal. The next few hours were spent in productive outdoor activity; building up another layer on the potatoes, weeding and the beginnings of what will be a raised vegetable bed once the silverbeet is finished. Very rewarding. All made of odds and ends found lurking in the garage too, not a cent was spent. Some of the wood will need to be replaced as it is not treated for outdoors, but a lovely brother has offered some leftover decking for that purpose.

Potato Marinara
4 medium potatoes
1 baby garlic shoot
500g marinara mix
1 cup grated cheese
2 spring onions, finely sliced
sour cream
seasoning

  1. Bake scrubbed and pricked potatoes in a moderate oven until tender
  2. Gently pan fry garlic and marinara until seafood is cooked through
  3. Cut potatoes open and divide marinara amongst them, top with cheese, spring onions and a dollop of sour cream. Season and serve
