Pancakes with Rice and Chicken Stuffing

150g brown rice
1 cup plain flour
1 egg
1 1/4 cups milk
oil and butter for frying
2 small chicken breasts
1 cup sour cream
1/2 cup grated tasty cheese
1/2 cup chopped macadamias
1 teaspoon dried tarragon
1/4 cup grated parmesan
1 small head broccoli, roughly chopped
Poach chicken breasts, cool and shred.
Steam rice however you wish (30 minutes, varoma temp, speed 1 in steamer basket with 750ml water in thermomix).
In a large jug, mix flour, egg and milk. Whisk until smooth.
Heat oil and butter in large fry pan. Pour 1/4 of batter, cook on both sides. Set aside. Repeat until you have four pancakes.
In a large bowl, combine shredded chicken, rice, sour cream, 3/4 cup of cheese, macadamias, tarragon and broccoli.
Grease a shallow rectangular baking dish. Divide chicken mixture between pancakes folding each pancake in half when stuffed. Place side by side in baking dish and scatter remaining tasty cheese and parmesan over the top.
Bake for 15 – 20 minutes and serve.
