the mouse is making fruity salad.
The Bread Winner is off winning bread interstate this week. So on one hand that means that I don’t have to worry too much about food as long as the kids will eat it. And let’s face it, my kids eat any old swill you throw at them. On the other hand, figs are coming into season and I love them. The Bread Winner however has a strange prejudice against savoury dishes containing fruit. What can I say? He’s a trifle odd. Lucky I love him in spite of his little peculiarities.
So, in honour of his absence, this was my dinner. I ate the whole lot. As a side salad it might stretch to feeding a few.
Fig, Bacon and Feta Salad
Handful baby spinach leaves
100g Danish feta, crumbled
2 rashers bacon
1 small avocado, diced
3 figs, quartered
Fry bacon until crisp and slice. Make a bed of spinach leaves and scatter everything else on top.
Dressing
2 tablespoons tarragon white wine vinegar
2 tablespoons walnut oil
1 teaspoon manuka honey
Combine well and drizzle over salad immediately before serving.

Oh drooool! Jamie O has a great salad involving figs, pancetta and buffalo mozzarella. Also another one with peaches. Fruit is great in salads.

We disappeared for the long weekend down to the beach. We stayed at a friend’s house with a massive fig tree simply covered with unripe fruit. Torture. Lucky I got my fix last night.
Maria figs and pancetta are such good friends aren’t they? Bacon was a nice substitue though. Love that juxtaposition of sweet and salty.
