I know with my icecream maker, I have to add alcohol to sorbets right at the end, otherwise I just don't get a good consistency at all. I have found that adding the alcohol at the end allows the icecream maker to do the sorbet perfectly. It all sounds very delish Dani!! This might help..or it might not :-)
