Nate I was also considering making pate with the scraps. Didn't have a recipe on hand though. It's on my list for next time, I think the belly scraps would be perfect for pate...or even a nice mousse. Tea smoking duck is a brilliant idea. It imparts such wonderful flavour. Perhaps an orange pekoe tea for duck?

Our fishmonger sells salmon belly scraps, and I've been wondering how to use them. This is a great idea, as I've also been wanting to do some smoking with tea (had in mind a duck). Thanks for posting this!
