Mmm - meant to add that if you want to get really fancy or are feeling particularly partial to your Ankle Biter, put a cookie or small piece of fruit bun or cake at the bottom of the fruit and custard, so it's like a mini trifle. Voila!

I love that custard idea Maria. Delicious.
Thanks for reminding me about mini fritattas Docwitch. Even easier than quiche!

ooohh...I'm going to make those muesli bars this weekend.

Some really good ideas here. I've just started making mini vegie frittata in muffin pans. They seem to be going down well.

Docwitchs last blog post..<a href="http://darksideofthebroom.blogspot.com/2008/07/fashion-meme.html" rel="nofollow">The 'Fashion' Meme</a>

My Ankle Biter (4) enjoys a hardboiled egg in his lunch. He'd have one every day if I made it. I wrap it in foil and twist the ends like a large lolly. He also loves a cooked corn on the cob (half a standard sized cob). Vegemite and cheese or ham and cheese sandwich, cheese and crackers. I've also put together a little container (make sure the lid seals well) of cut fruit like grapes or cut apple/pear and poured some hot custard over it, put in the fridge overnight to set. It makes a reasonably healthy sweet treat and is easy to do if I'm making custard for dessert, I just set aside a little portion while dinner is on the go. Don't forget a teaspoon in the lunchbox!
