Overrun with odds and ends

No idea what is going on at Chez KP at the moment but I have odds and ends of leftovers everywhere. If not strictly leftovers, it’s bits and pieces that need using urgently so as to be wasted. So creativity is required.
Last night I decided to finish some leftover cooked sausages, leftover colcannon, some mushrooms that were on there last legs, a little bit of pesto that was also near expiry and some sliced tasty cheese that didn’t get eaten at the park. So naturally that brought pizza to mind. My favourite pizza base uses mashed potato so I was able to use some of the colcannon in that. I still have some leftover but that’s a story for another meal.
I split the dough into 2 bases. one for Ankle Biters, one for grown ups. The Ankle Biters had sliced tomato and sausage with mozzarella. We had pesto, caramelised shallots, swiss chard, lightly sauteed mushrooms and goats chevre. Delicious.





I really need to start using stuff out of our freezer. I say stuff because that’s what you have to do to get anything in there at the moment.
We have a strict policy that only bread and ice cubes are allowed to be removed from the freezer, everything else is doomed to permafrost, never to see the light of day again. I am very envious of your fridge management Dani.

Now that’s a policy! At least when your freezer is stuffed full it’s working more efficiently than partly empty. I used to suffer a similar situation until I started keeping lists attached to both freezers of what is in there. It makes incorporating the stockpile into the weekly plan a snap. I have a little whiteboard on one freezer and just write on the door of the other in erasable marker.
Your pizza dough uses mashed potato? Please share! (Mine uses beer, which can be a cause of marital tension - who’d think people actually want to DRINK the beer with their pizza.)

Hi Dani, great to see you getting thru the hogget. Bet it was absolutely delicious and unctuous.
We had to remove everything from the freezer and write up a list after adding little bits here & there. luckily the labels had stuck on most.
The pizza dough sounds like the type of bread that is made in Puglia similar to foccacie - would be nice and light. Hi Kazari, strange as it may seem beer is the preferred beverage for Italians eating pizza - I lost a point in trivial pursuit not knowing that - so now I remember.

Hey Thermomixer, Bread Winner would agree with the Italians on that. Although beer is always his preferred beverage.
