Ooops, out of bread…

Which is always a pain when you’ve been at a picnic all day and you’re tired and have cut lunches to make. A few minutes staring slack jawed into the pantry provided a decent solution. Lucky the Lil Miss isn’t fussy though. I did run out of the avocado and crab mixture so she got sliced left over sausage in hers. Serves her right for the not sleeping caper she’s been subjecting me to for the last couple of years.
Avocado and Crab Rolls.
170g tin crab meat
1 avocado
1/2 lemon, juiced
1/3 cucumber, julienned
2 spring onion, cut into 3 inch lengths
1/2 red capsicum, cut into long strips
a few left over sun dried tomatoes cut into long strips
rice paper spring roll wrappers
Mash crab, avocado and lemon juice together. Line up all other ingredients.
Soaking rice papers one by one in hot water. Place a little of everything in a strip up the middle of the paper, leaving bout an inch at either end free of filling to fold over. Fold ends over and roll up.
