The nuts were pretty finely ground but the leek has more body than onion so I would think the trade off between whole chickpeas and onion would hold up pretty well Maria.

Yum - sounds great, my boy is a pumpkin-lover. Could you substitute the nuts with chickpeas, and the leek with onion? Could you add baby spinach? Maybe I should post in the recipe challenge instead with what I *do* have in the fridge, lol!!

It's nice to know it's not just my boys who are reluctant pumpkin eaters. Drive me crazy, I love the stuff and it's ultimate budget food.
I'm torturing mine with carrot fritters this week too :D

Thanks Dani, that looks delish. I lurve pumpkin, but the boys are reluctant - and we eat it a lot when it's 39c/kg :P Will try this recipe out when they get over the sweet potato and buckwheat burgers we are having tonight, lol.

Ems last blog post..<a href="http://tomatoesforbreakfast.blogspot.com/2008/05/ginger-garlic-red-lentil-soup.html" rel="nofollow">Ginger Garlic Red Lentil Soup</a>
