How did you manage to get flathead so cheaply??? It costs an absolute fortune here. It's criminal. I was brought up on flathead. It has strong strong childhood memories for me too..and ohhh yes, the tails are definitely the best part of the fish. The thing I love most about flathead is that it lends itself so well to simplicity in it's cooking. It's so delicate it deserves to be treated delicately. I love it. One of my favourite foods ever!
