I can’t believe it’s not leftovers…

After the week of ‘food re-engineering’ we’ve had at Chez KP, I was determined to have completely hoggett free, colcannon free Saturday night dinner. Well the colcannon is long gone but there are a good three meals worth of hoggett still lurking in the freezer.
So tonight’s fare was mashed potato with caramelised witlof (chicory for the North Americans), free range continental pork chops, sage, pinenuts, lemon and capers.
The potato was mashed with sour cream, butter and seasoning, the pork chops pan fried in butter, extra virgin olive oil and lemon juice and the witlof caramelised thusly. ‘Twas served in a mound and garnished with pan fried sage leaves, pine nuts and capers and greatly enjoyed by all.

Nice, love braised witlof – the bitter flavour with the sweetness from caramelising is wonderful. Good work.
