This one is super quick and easy Em. Really. Especialy if you make lots and knock off dinner and the next days lunch in one preparation session. I find the time because I only work part time. And it interests me enough that I make the time. Plus I pre-plan. Planning helps a lot, ou can do bits and pieces in little steps.
You're bound to be a nicer mother than me (I scream a lot), you're already a better sewer. I can't comment on the cooking because I haven't tasted yours and I'll leave my friend's to judge my capability in that role, even an old narcissist like me can't be too presumptuous ; p
BTW, the thermomix really helps the time management!!

We used to make something similar when I was younger. It works nicely with puff pastry too - put the pastry in the oven to "puff" then throw in the goodies. :)

Any alternative to sandwiches is friend of mine. It takes the pressure of the bread baking time line. I was determined not to waste that bit of rice!

The quiches looks delish. Very good alternative to sandwiches for lunch too. Love the brown rice idea.
