Artichoke & Salmon Pizza

Mondays are getting away from me at the moment. Between spending the morning working in the pool and the afternoon grocery shopping, not to mention a weekend’s worth of laundry…I need a quick and easy meal. It’s a glorious 30 degrees in Melbourne today too so something light and delicious was called for.

Artichoke & Salmon Pizza
340g jar marinated artichoke hearts
100g roughly chopped grana padano
baby spinach
210g can red salmon
half small red onion finely sliced
210g bocconcini
spelt flat bread
cracked pepper
In thermomix or food processor, combine artichokes and grana padano. 5 seconds at speed 6 in thermomix. Spread on flat bread. Scatter baby spinach over top. Crumble red salmon across and top with onion. Slice bocconcini and place on top, season with cracked pepper.
Cook at 180 degrees for about 15 minutes.
This really only makes 3.
